Chocolate Gingersnaps

Our guests that visited us this weekend asked that we post the recipe for the Chocolate Gingersnaps that we baked this weekend.  I have to say so myself, I was concerned that they would taste too gingery - but with the combination of the chocolate - they were delicious.  Here is the recipe:

Chocolate Gingersnaps

1/2 cup butter, softened

1/2 cup packed dark brown sugar

1/4 cup molasses

1 tablespoon of water

2 teaspoons minced fresh ginger

1-1/2 cups flour

1 tablespoon Hersey’s Cocoa

1-1/4 teaspoons ground ginger

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

7 ounces semisweet mini chocolate chips

1/4 cup sugar

In a large bowl, cream butter and brown sugar until light and fluffy. Beat in molasses, water and fresh ginger. Combine flour, cocoa, ginger, baking soda, cinnamon, nutmeg and cloves. Gradually add to creamed mixture and mix well. Stir in mini chocolate chips. Cover and refrigerate 2 hours.

Shape dough into 1 inch balls, roll in 1/4 sugar. Place 1 inches apart on greased baking sheets.

Bake at 350 for 10-12 minutes or until tops begin to crack. Cool for 2 mins on pan and transfer to cooling racks.

MacKenzie-Childs is a must see when you visit our area. You might not buy anything - cause everything is very expensive - but still a must see. The have all types of ceramic, glassware and enamelware pieces which are hand painted and furniture, rugs, lighting and holiday pieces. There is even a person in the shop painting pieces or you can go to the back of the shop and watch a video on how they make and paint their pieces. I am thinking Alice in Wonderland would have loved this place.

I bought a TeaPot which will never be used as a TeaPot, but I can brag that I bought it from MacKenzie Childs. I also bought a Peacock Frame which I will use. The Inn - The Journey to our Dream
We wanted to open a Bed and Breakfast in the Finger Lakes for a few years. We bought this awesome house in August of 2013 with 4 fireplaces, 6 bedrooms, 6 baths and a breathtaking view of Cayuga Lake. Living in the city (Staten Island) most of our lives, we never imagined that we would live in a place where we could look out of our backyard and have an awesome view of one of the major Lakes in Central New York in the heart of the Finger Lakes. Our house was built in 1819. We have 7 1/2 acres of land with 2 barns and a Carriage House. With all this land, we hope someday to have a huge vegetable and fruit garden. It would be great to grow our own veggies and fruits to serve in our Inn. Since the house is old, the rooms needed a lot of TLC. Cleaning, painting and decorating. We wanted to paint and decorate them according to the theme we chose for our rooms. We have 4 rooms in the Inn. Spring Meadow, Like A Fine Wine, Harvest Moon and Northwoods. Northwoods is currently under construction. When completed it will be a 2 room suite and done in a cabin/woodsy theme. The other 3 rooms will be open soon. Pictures are posted below of our house and one with the view of the Lake.
